Savory healthy muffins


Healthy snack to have on the go BUT very suitable for toddlers as well. My daughter loves them, and we learn how healthy food can be fun as well!




















Ingredients

  • 120 gr zucchini, grated

  • 60 gr carrot, grated

  • 15 gr frozen peas

  • 15 gr frozen corn, alternatively baby corn canned

  • 1/2 cup milk

  • 2-3 tbs plain greek yoghurt

  • 3 tbs sunflower oil (or olive oil if you prefer)

  • 1 egg

  • some feta cheese



  • 40 gr wholemeal flour

  • 80 gr cornflour

  • 2 tsp baking powder

  • sweet paprika

  • pepper

  • thyme

Instructions

  • Preheat your oven to 180 C

  • Place the zucchini and carrot onto a towel so as to squeeze all the juice out.

  • Place the zucchini and carrots into blender or mixer (whatever you have, even a handblender can work) along with the peas and corn. Add the milk, yogurt, oil,


feta and egg and stir well.

  • Add the flour, seasonings and baking powder to the mixture. Stir well until evenly combined.

  • Use some silicon muffin forms (no oil or butter is needed). Pour the mixture, equally, I used 10 forms for this. Bake for 20-25 mins.
