pumpkin cake

I tried this recipe and it's both fast and tasty. Pumpkin season is finally here ❤❤




Ingredients

  • 3/4 cup pumpkin puree

  • 2 eggs

  • 200 gr plain flour

  • 1/2 cup stevia

  • 4 tbs coconut oil

  • 150 gr yoghurt

  • 2 tbs. baking powder

  • 1/2 tbs baking soda

  • cinnamon, cardamom for taste

  • pumpkin seeds



Instructions


In a bowl, add the eggs, the stevia and beat well with a whisk (or a hand mixer) until they are fluffy. Add the pumpkin puree, yogurt, coconut oil and mix well.

In another bowl, pour the flour, salt, baking soda, spices and mix. Sieve the mixture of solids in portions into the mixture of liquids and gently mix .

Pour then the mixture into a cake form lined with non-stick paper, add the pumpkin seeds and bake in a preheated oven at 180 degrees for 45-50 minutes.
