cocoballs



Ingredients:

  • 160g pitted dates roughly chopped

  • 2⁄3 cup (60g) shredded coconut

  • 4 tbs (40g) rolled oats

  • 1⁄2 tsp vanilla extract

  • 1⁄4 tsp salt

  • cinnamon

Instructions:

Place the dates in a bowl, cover with boiling water and set aside for 10 minutes.

Drain the d


ates, saving 1 tbs of water and add to a food processor. Blend until smooth and caramel-like.

Add all the remaining ingredients to the food processor and mix until the mixture binds together, adding liquid from dates if needed.

Roll into balls the roll the balls in coconut and store in an airtight container in the fridge.
