Apple pie pancakes

Ingredients:

  • 50 gr whole grain flour

  • 20 gr rolled oats

  • 1/2 tbs baking powder

  • pinch of salt

  • 1/2 cup almond milk

  • 1 egg

  • vanilla powder

  • coconut oil

  • 1/2 apple cut into chunks

  • ground cinnamon

Instructions:

Boil your apple for 10-15 minutes until tender and set aside. In a bowl add the flour, oats,salt, baking powder and some cinnamon and whisk. In another bowl whisk the egg and the add the milk, vanilla some cinnamon


and the add this mixture to the fist bowl as well as half of the apple chunks. Stir through everything and leave in the fridge for at least 15 minutes so it sets.

Heat a pan along with a bit of coconut oil over low-medium heat, and pour some of your mixture. Cook until bubbles appear and the flip to the other side.

Serve with the rest of the apple and other fresh fruit, honey or whatever you like! I added some blueberries here.
