chicken-noodle soup

I got the inspiration from this recipe, it's not much different I just used ingredients that I had home.The result is magnificent I can assure you!


Ingredien

ts:

  • 1 chicken thigh

  • 1 tbs oil of your choise

  • 1 onion chopped

  • 2 tbs minced fresh ginger

  • 4 tbsp curry powder (i used extra spicy)

  • 1 can light coconut milk

  • 3 cups chicken broth (or whatever broth)

  • 1-2 tsp raw honey

  • ground pepper

  • 1tbs chilly flakes

  • 1 tbs coriander plus extra for topping

  • fresh red chilly pepper

  • a handfull of rice noodle


Instructions:








Use a large pot over medium heat and once hot, add oil, onion and ginger. Sauté and right after add the curry powder and stir. Cook for 1-2 minutes more. Then add the coconut milk, chicken broth, honey, and chili flakes.

Bring to a very gentle boil over medium heat. Once simmering, add the chicken and cover. Adjust heat as needed to avoid boiling!

Simmer chicken until cooked through, ~10-12 minutes. Then remove from pot and shred with two forks. Return to pot and simmer for 5 minutes more.

Taste your broth frequently and adjust your seasonings according to your taste! I added extra coriander and curry.

Five minutes before removing from fire, add your noodles and stir once.

Serve as is or garnish with your fresh herbs, maybe some pinch of fresh ginger and coriander! I also added the fresh red chilly peppers because I love spice dishes!
