baked chicken with pineapple


Ingredients

  • 1 tbs konjac powder

  • 1/2 cup cold water

  • 1/4 cup brown sugar

  • 2 tbs agave syrup

  • 1/2 cup soy sauce

  • 1/4 cup cider vinegar

  • 1 clove garlic, minced or 2 tsp garlic powder

  • 1/2 teaspoon ground ginger

  • 1/4 teaspoon freshly ground black pepper

  • 4 skinless boneless chicken drumsticks

  • 1 cup fresh or canned pineapple chunks



Instructions


Start with the sauce. Combine the cornstarch mixture, brown sugar, agave, soy sauce, vinegar, garlic, ginger, and black pepper together. Whisk konjac and water together in a small bowl and add it right away in the first mixture in a small saucepan over low heat. Allow to simmer while whisking occasionally. Bring to a boil and allow to boil for 1 minute. Turn off the heat and set aside for at least 10 minutes, allowing it to cool and thicken.

Preheat your oven to 200 degrees.

Put the chicken drumsticks and pineapple slices in a bake pan. Pour the sauce on top, then turn the chicken over to make sure every inch is coated in the sauce.

Bake uncovered for 30 or until the chicken is completely cooked through.

You may serve with rice or veggies of your choice. Also remember to garnish with sesame seeds for some crispiness!
