chicken with mushrooms
Ingredients:
1 chicken thigh cut into bites
100 g fresh sliced mushrooms
1 tbs garlic powder
mix of fresh herbs (oregano, basil, thyme)
fresh parsley
1/2 cup of nut milk ( or regular milk1.5% fat)
1 cup of broth
1 tsp corn flour mixed with 2 tbs cold water
grated parmesan or nutritional yeast
½ tsp olive oil
salt
pepper
chilly flakes
Instructions:
Mix the chicken with the salt and the garlic powder. In a non-stick frying pan heat the olive oil and bake the chicken for 3-4 minutes. Transfer the same pan to the chicken in a preheated oven at 200 degrees until they are cooked for about 25 minutes. Remove the pan from the oven, remove the fillets and set aside, transfer the pan with the chicken juices to the fire again. Sauté for 1-2 minutes, add the mushrooms, herbs and parsley and cook until the mushrooms are soft. Pour the milk, broth , salt and pepper and chilly flakes and reduce the heat and continue cooking, taking care not to boil. Then pour the corn flour and stir constantly until the sauce is slightly cooked. Add half the parmesan/yeast and stir. Add the roasted chicken and leave for a few minutes. Garnish with the rest of the parsley and parmesan.
