white chocolate, peanut butter, no banana, no-bake energy bars
Ingredients:
1 cup old-fashioned rolled oats
1/2 cup of nuts (preferably almonds, cashews or pecans, or a mix of those!)
1/2 cup of dried dates and plums
1 tbs hemp powder (optional)
1/4 cup of seeds (chia, lin, pumpkin, sunflower)
1/3 cup of peanut butter
1/3 cup maple syrup
1 block of white chocolate
Instructions:
Toast your oats and nuts in a 350 degrees until they get slightly golden brown.
Process you dates and plums, the seeds and the hemp powder in a food processor, blender or whatever you may have until small bits remain.
Place the oats, nuts and dates/plums in a large mixing bowl as well as the seeds. Warm the maple syrup along with the peanut butter in a saucepan over low heat. Stir and pour over oat mixture and then mix, using a spoon or your hands.
Use the same baking sheet to form your 'big bar'. Let it rest for some minutes (lets say 20) in your fridge before you cut it. Cut into the desired size.
Then just warm your chocolate and add it to your lovely bars!
Not using banana means that you have more time so as to store your bars. I keep them for one month with no problem!
*Hemp powder in optional, if you'd like to add some protein to your bars.
**Chocolate is also optional, you may as well use dark chocolate.
