ultra spicy aubergine

The title of this dish is dedicated to my husband, since he loooooves the word ULTRA!!! But still apart from this, if you

don't prefer eating spicy food, never ever,ever,ever,ever ......combine all the ingredients I used here. I am NOT-spicy intolerant so for me it is perfectly fine :)


Ingredients:

  • 300 gr of minced chicken

  • 2 aubergines

  • 1 onion

  • sambal oelek sauce

  • turmeric

  • hot paprika

  • garlic (powder or cloves)

  • oregano

  • ground coriander

  • ground pepper

  • fresh cilantro

  • olive oil

  • jalapenos peppers

  • greek style yoghurt

  • lime juice

Instructions:

Preheat your oven to 200°.

Cut each eggplant into half in a cross-hatch pattern, being careful not to cut through the skin. Place the eggplants on a foil and bake them until tender. You will need approx. 30-40 minutes. If you wish you may add salt, pepper and olive oil.....i didn't.

Next step is to heat a a non-stick pan over medium-high. Add 1 tablespoon olive oil; add the onion and then the minced chicken: cook until they get golden, and then add your seasonings and the sambal oelek sauce as well as some water. Let the boil for 5 minutes, that's enough.

So you have the aubergines and the chicken ''mix''. Last step is to mix the yogurt with the lime juice. Serve by adding first the meat, then the yoghurt and last but not least the jalapenos and some extra hot paprika!
