buddha bowl with red lentil köfte and lime-yoghurt dressing


Ingredients:


For the lentil köfte:

  • 1 cup of red lentils

  • 1/2 onion

  • handful of parsley

  • salt and pepper

  • sweet paprika

  • 1 tsp oregano

  • 1tsp extra virgin olive oil


For serving:

  • zucchini pasta

  • tomato cut into cubes

  • cucumber cut into cubes

  • alfalfa sprouts

For the dressing:

  • 2 tbs. greek style yoghurt

  • juice from one lime and some zest

Instructions:

Soak the lentils for at lest 3 hours with plenty of cold water. Transfer to a blender with all the rest ingredients and blend until you get a smooth texture. Use a baking parchment to bake the balls at 200 degrees until they get a nice colour. Stir the yoghurt with the juice and zest of lime. Serve in a bowl, where you have already added the fresh veggies and then add the dressing as well as more fresh herbs if you wish.
