cauliflower tortillas
Cauliflower is the best ingredient one could use. You can do so many different things with it as you may have already noticed in my blog! I am also grabbing the chance to motivate you google a little about alfalfa. It is really healthy, packed with vitamins and protein and with almost no calories....

Ingredients:
1 cup riced cauliflower
1 egg
1 spring onion
1/4 lime, juiced and zested
1/2 tsp baking powder
salt & pepper
Instructions:
Preheat the oven before you turn you cauliflower into rice. Use a food processor to do that. Place the rice in the steamer or in the microwave if you have one, to ''boil'' it. Then use a dishtowel and squeeze out as much liquid as possible, being careful not to burn yourself. It is very hot believe me!
Use a bowl to whisk the egg. Add in the cauliflower rice , as well as all the other ingredients. Mix until well combined. With these proportions you will get one big tortilla or two small. Shape the tortilla(s) on a parchment paper.
Bake for 10 to 20 minutes, and the carefully flip the tortilla, and return it to the oven for an additional 5 to 7 minutes, so as to get a nice colour. You may eat the tortilla without any stuffings. I used Philadelphia, mushrooms, spring onion, jalapeno pepper and alfalfa sprouts.
