spinach crepes

Those of you who have children probably already know better than me how difficult it is to convince them eat their greens. This is a cheat recipe that will also give some color to their food and make it a little bit playful ~


Ingredients:

  • 1/2 cup almond milk

  • 2 cups spinach

  • 1 egg

  • 5-10 gr coconut flour

  • 1 tbs nutritional yeast

  • 1 tsp chia seeds

  • 1 tsp linseeds

  • salt

  • pepper

  • oregano

Instructions:



First blend the spinach and the milk until you get a smooth puree. Then add all the other ingredients and stir to form your batter. Note that is will be quite liquid but you can add mor

e flour if you want. Let it rest in the fridge for at least one hour.

You may fry the crepes the usual way, by using a pan and some oil. But i used the oven at its maximum temperature and a baking sheet as I always do Fill your delicious green crepes with whatever you may like! I filled them with cabbage, carrot, balsamic glazed mushrooms and onion and some philadelphia.

Enjooooyyyyyy.....with no regrets :)
