carrot soup


Ingredients:

  • 3-4 carrots cut into chunks

  • 1 onion sliced

  • 125 ml coconut milk

  • 2.5 cups vegetable broth

  • paprika powder

  • turmeric powder

  • curry powder

  • ginger powder or fresh

  • pepper

  • extra virgin

olive oil

  • thyme

Instructions:


Use a non-stick pan so as to saute the onion with the olive oil along with the carrots. Continue the process for another 3-4 minutes, add then add the vegetable broth, the thyme, the curry, the turmeric, the ginger, and the pepper. Then lower the heat and leave the soup for 40-45 minutes to simmer so all the flavors are combined. Add the coconut milk use a hand blender. Mix until the mixture gets a smooth texture. Garnish the carrot soup with fresh thyme and pepper!
