soft pumpkin bars

I love the taste of pumpkin YES it is absolutely so true. I tried to find a recipe that for bars, that uses as main ingredient this amazing ingredient. So I tasted the and they are simply delicious, as expected :)

Ingredients:

  • 2 cups pumpkin puree

  • 1/2 cup coconut butter

  • 2 1/2 cups rolled oats

  • 1 cup pumpkin seeds

  • 1/2 cup sunflower seeds

  • 1 tbsp nutmeg

  • 1 1/2 tbsp cinnamon

  • 5 tbsp maple syrup

Instructions:


In a bowl add the pumpkin puree, the coconut butter, honey, cinnamon and nutmeg and mix them all well. Add the oats and seeds and continue to stir. Transfer the dough to a baking sheet. Press the mixture with your hands so that it is flat and evenly distributed. Transfer to an already preheated oven at 180 degrees. Bake for about 20 minutes and then leave it to cool. When it is cold, cut into the shapes you like.

You can keep them in the fridge for a couple of weeks. I usually cover them individually with baking sheet!
