meatballs and eggplant pot

Ingredients:

  • 200 gr minced meat

  • 2 onions

  • nutritional yeast

  • 1 egg

  • 1 eggplant

  • 150 gr tomato sauce

  • 1 carrot (shredded)

  • turmeric

  • sweet paprika

  • salt and pepper

  • oregano

  • thyme

  • olive oil

Instructions:


In a bowl mix the meat, 1 onion shredded, egg, nutritional yeast and the seasonings. Make the meatballs in the size of your choice. Cut the eggplant into cubes. Place a baking sheet on a tray and bake the meatballs and eggplant until the get a golden color. Then use a non-stick pan. Spray some olive oil and add the meatballs, eggplant, the second onion and the tomato sauce. Season again and add water. Boil them for 10 minutes in medium fire and finally add the shredded carrot. Stir for a couple of minutes.
