winter's butternut squash
Ingredients:
butternut squash
chicken breast cut in small pieces
spinach
1 onion chopped
2-3 tbs cottage cheese
raisins
ground pepper
salt
cayenne pepper
dill
cinnamon
spearmint
olive oil
Instructions:
Cover the squash with foil and bake it for as long as it needs to become tender. Use a preheated oven at 200 degrees. It will take an hour more or less, it depends on how big the size of the pumpkin is. When ready, empty carefully the flesh and put it aside. Use a non-stick pan to saute the onion and the chicken. When they get a golden color add the spinach, the raisins and the pumpkin flesh. Pour some water and simmer for some minutes. Then add all the seasonings and simmer for a couple of minutes again. Finally
remove from fire and add the cottage cheese. Fill the empty pumpkin skin with the mixture and place it in a tray. Put it in the oven at low temperature (100-120 degrees) for 20 minutes.
