mushroom bites with spicy pepper sauce
Ingredients:
For the mushroom bites
200 gr portobello mushrooms
1 onion
1/2 cup of rolled oats
1 egg
thyme
oregano
ground pepper
garlic (optional)
parsley
olive oil
For the pepper sauce
2 red bell peppers
1/2 onion
chilly pepper flakes
1/2 tsp stevia
hot paprika
coriander
thyme
cumin
pepper
olive oil
Instructions:
In a non-stick pan, saute the onion with the olive oil. Add the mushrooms, garlic and thyme and pepper and let the mushrooms take out their liquids and as soon as they absorb them remove from fire. Let them rest until they are cool down. In a bowl add the cooked mixture of mushrooms ( oregano, parsley, eggs ,oats, , pepper, and leave in the fridge for a few hours. Remove from the fridge and shape the bites as balls. Bake them in the oven on a baking sheet at 200 degrees until they get a golden color. Then prepare the sauce by cutting the bell peppers and the onion into small pieces. Use a non-stick pan to saute them with some olive oil. Add the seasonings and cook them for a couple of minutes. Transfer in a mixer or hand blender to get a smoother texture and then again back to the pan adding some water. Add the mushroom bites and cook for another 3 minutes. Garnish with nutritional yeast, fresh parsley and ground pepper! You can serve with rice, noodles, or greens as i did...Enjoy!
