stuffed peppers with eggs
I won't bother you (once again) with portions, amounts of ingredients etc.... Everything goes according to your preferences and the size of the peppers of course!
Ingredients:
bell peppers
zucchini
aubergine
spring onions
shredded carrot
eggs (2 for one pepper)
grounder pepper
pink pepper
sweet paprika
thyme
garlic powder
mozzarella
Instructions:
Cut the zucchini, aubergine and spring onions into small pieces. Saute them in i saucepan adding the peppers, paprika, thyme and garlic. Before removing from fire add the carrot. Meanwhile cut the bell peppers into halves and roast them at the grill function in the oven until they get 'burnt' using a baking sheet (turn them on the side of the outer skin). Fill the peppers with the veggies and carefully add the eggs on top of them. When the eggs are almost done add the mozzarella. Serve with grounded pink pepper!
