mediterranean zucchini pasta
Ingredients:
zucchini
aubergine
onion
kalamata olives
feta cheese
red pepper
1-2 mushrooms
oregano
basil
grounded pepper
sweet paprika
chilly paprika
tomato cut into cubes
2-3 tbs of tomato sauce
Instructions:
Cut all the veggies into small cubes. Place them all together in a pot or pan and add some water. Then add the seasonings and boil for 10 minutes in medium heat. Add last the olives and the feta cheese as you don't need to overcook them. Those ingredients add also a more salty flavour to the sauce, so be careful if you are using salt. Use a spiralizer to cut the zucchini in shape of pasta. Serve the pasta with your sauce and enjoy!
