chicken & quinoa Salad

Salad that you can serve both for lunch and dinner and also have it as a main

meal. It is full of protein and vitamins and even a small portion makes you feel full and satisfied!


Ingredients:

  • 45 gr quinoa

  • chicken breast

  • 1 spring onion

  • broccoli boiled

  • cucumber cut into small cubes

  • 1/2 cup of black-eyed beans boiled

  • grounded pepper

  • smoked paprika

  • tandoori masala

  • Dressing :lime juice,dijon mustard,olive oil

Instructions:

Place the quinoa in a saucepan and cover it with water. Use high heat and bring to the boil. Then cover with a lid and reduce the heat to low. Simmer for 10 to 12 minutes or until liquid has been absorbed.

Shred the chicken and use a non-stick pan to fry it. Spray with olive oil and add the seasonings. Prepare a dressing with the dijon mustard,the olive oil and the lime juice. Place everything into a bowl and serve with the dressing!
