zucchinetti bolognese
Sometimes I feel that having spaghetti bolognese is a sin... That's why I decided to make one or two changes to enjoy this delicious dish, guilt-free.
For one portion you will need the following.
Ingredients:
1/2 fresh zucchini
100 gr tomato sauce
180 gr minced beef
1/2 onion chopped
garlic powder (or one garlic clove)
a shot of red wine
extra virgin olive oil
rosemary
fresh basil leaves
grounded pepper
salt (optional)
Instructions:
For the zucchini pasta (zoodles):
Use a spiralizer, a julienne peeler or a mandoline with the suitable blade to make the zucchini look like spaghetti.
For the bolognese sauce:
Spray a nonstick pan with a small amount of the olive oil. Place the meat, garlic and onion on it until they start to brown. After that add the seasonings and the wine, apart from the basil and simmer until the alcohol is evaporated. Then add the tomato and some water, up to the point that everything seems covered. Let them boil in medium temperature until you get a thick sauce and the add the basil leaves leaving some for decoration!
Let it rest for 1 minute and serve with the zoodles!
