greek bagels (koulouria thessalonikis)


Finally I've found the best recipe for my favorite Koulouria!!!! I am so thrilled and I want to share it! They both look and taste so gooood I can't even describe. This goes to all my friends from Greece living abroad!


Ingredients:

  • 400 gr all purpose flour

  • 100 gr wholewheat flour

  • pinch of salt

  • 325 ml lukewarm water

  • 1 package dry yeast

  • 3 tbs olive oil

  • stevia

  • sesame

  • raisins

  • sunflower seeds (chia seeds or whatever else you may like)

Instructions:


Add all the ingredients in a mixing bowl and knead until you get a dough that doesn't stick to your fingers. Let it rest for one hour and then knead it again for a couple of minutes. Lightly grease a baking sheet and preheat the oven to 200 degrees. Cut the dough into even pieces. Then roll each one into a round balls. Then make them long rolls and bring the two ends together forming a circle. You can also add raisins inside the rolls before making the circle for extra sweetness (as I do!).

Dip each bagel in a bowl with water and transfer it to your mix of seeds. Place on the tray leaving some space between them.

Bake the bagels for 20 to 25 minutes, until they are as deep brown as you like.

*Tip: You can keep the in the freezer and just put them in the oven for a couple of minutes to defrost. They still taste fresh!
