one pan chicken with leeks
Ingredients:
1 leek (mostly the white part)
150 gr chicken
sliced sun-dried tomatoes
parsley
olive oil
pepper
sweet paprika
salt (optional)
Instructions:
Cut off the green tops of the leek and then cut off
the root. Cut the leek in half lengthwise.You need to rinse it well under running water since it can contain a lot of dirt. Then cut your chicken into small pieces. Use a non-stick pan heat some drizzles of oil and fry slightly the chicken. When it gets some color add the leek and the seasonings along with some water. You can also use some chicken or vegetable broth for more intense taste. Cook on medium heat for about 10 minutes until everything looks done. Remove from the heat and add the fresh parsley and the sun-dried tomatoes.
