avocado pancakes
I love her blog and you know it!!! Feasting on fruit has amazing recipes and one of them I just tried and I want to share it with you. It is (as always) veeeery easy and delicious! I made some modifications but you can find the original recipe here.
Let's do it then!
Ingredients:
1/2 of a ripe avocado (about 60g)
100gr nut milk
1-2 tbsp maple syrup (or sweetener of choice)
1 tsp vanilla extract
1 tbsp baking powder
85 gr rolled oats
1 tsp matcha powder
pumpkin seeds for decoration :)
Instructions:
Add all the ingredients to a blender and blend until you get a fine texture. Heat a non-stick pan over medium-low heat. You don't have to use any oil.Scoop 1-2 spoonfuls of batter into the pan and spread into a circle, not too thin. Cook for 3-4 minutes on each side or until a spatula easily slides underneath to flip. If the center of your pancakes isn’t cooking through all the way, lower the temp and leave them for longer on each side. Repeat until all the batter is used up. I topped with pumpkin seeds and yogurt!
