meatball sandwich (greek style)
Ingredients:
for the pita bread
25 gr fresh yeast
400 ml lukewarm water
2 tsp sugar
650 gr flour
1tsp salt
for the meatballs
200 gr minced meat
1/3 shredded zucchini
1/2 onion
1 egg
parsley
sweet paprika
salt and pepper
for the tzatziki sauce
200 gr Greek style yoghurt
1/2 shredded cucumber
dill
garlic
olive oil
vinegar
Instructions:
Start by making the pita bread because they need some time. First dissolve the yeast in the water. Then add all the other ingredients and mix them well. Once the dough is uniform, place it in a lightly oiled bowl. Leave to rise for 1 hour until doubled in size . Then cut the dough in 8-10 pieces and make flat breads. Use a non stick pan and drizzle with olive oil to bake the pita's for 1-2 minutes.
The tzatziki is very very simple. Place the grated cucumber in a sieve, rest it on a bowl and add some sea salt so it loses all its water. Then combine all ingredients together and leave in the fridge for a couple of hours. It tastes better when served cold!
For the meatballs all you have to do is to mix all the ingredients and shape the meatballs. Bake the in the oven using a baking paper at 200 degrees.
For serving I also used some roasted vegetables, but you can use potatoes as greeks do!
