pumpkin pancakes


For this recipe you won't use any flour. This recipe makes about 3 medium sized pancakes and is suitable for vegan, paleo and gluten free diets.


Ingredients:

  • 1/2 cup rolled oats

  • 1/4 cup milk of your choice

  • 1/2 cup pumpkin puree

  • 1 tbs ground flax seed

  • 1 tbs baking powder

  • cinnamon

  • stevia or honey or maple syrup for sweetness

Instructions:


Stir all ingredients together in a bowl until smooth. Let the mixture rest in the fridge for at least 5 minutes. Use a non-stick pan and pour 2-3 tablespoons of batter for each pancake. Cook each one for 1-2 minutes. I topped with frozen blueberries and honey but you can improvise!


*You can substitute the oats with quinoa.
