no-meat patties with sweet chilly sauce

Ingredients:


For the burgers

  • 150 gr quinoa

  • 300 ml water

  • 1 onion finely cut

  • 300 gr pumpkin cut in small pieces

  • 200 gr black eyed beans

  • paprika powder

  • olive oil

  • 40 ml soya sauce

  • thyme

  • fresh parsley

  • salt and pepper

For the sauce

  • 150 gr water

  • 50 gr stevia

  • 50 ml white vinegar

  • 1 tsp corn flour

  • chilly pepper

Instructions:

Put the water in a pot and boil it. When ready add the quinoa , cover, lower the heat and leave there for 12-14 minutes until quinoa absorbs all the water. Put aside. In a bowl, mix the pumpkin with the onion, paprika, olive oil and soy sauce. On a tray, add the pumpkin mixture, spread it and bake in a preheated oven at 200 degrees for 40 minutes stirring 1-2 times . Then combine the quinoa with the baked mixture of pumpkin and beans and stir. Take half of the above mixture and leave it aside. In the other half add the parsley, thyme and use a food processor to blend. After that mix the two mixtures together and with wet hands make 5 burgers. Bake in a preheated oven at 180 degrees for 25-30 minutes.

Place a saucepan over medium heat. Add the water, sugar and vinegar . Stir and boil for 3-5 minutes. Remove from heat and add the chilly pepper and the corn starch. Stir until the sauce is thick enough.

You can serve with ruccola or other vegetables.
