roasted rainbow veggies
Ingredients:
1/2 zucchini
1/2 aubergine
1 big onion
3-4 spring onions
1/2 butternut squash
broccoli
culiflower
cabbage
2 carrots
olive oil
turmeric
thyme
oregano
pepper
sweet and hot paprika powder
200 gr tomato sauce
Instructions:
Preheat the oven to 200 degrees. Cut all the vegetables into small pieces and turn the oven to the grill mode. Then place the veggies on a roasting pan mix them with some olive oil and roast for 4-5 minutes. Then turn again the oven to 200 degrees and add all the seasonings and the tomato sauce. Roast for 35 to 40 minutes, stirring every 10 minutes, or until vegetables are cooked through and browned. Serve with feta cheese!
