carrot-lentil purée
Ingredients:
3 cups of carrots peeled and diced
2 cups red lentils
300 gr tomatoes dived into chunks
4 cups vegetable broth
1 medium onion diced
1 tbs turmeric
1tbs sweet paprika powder
1/2 tbs garlic powder
1 tbs olive oil
cinnamon
salt and pepper (optional)
Instructions:
In a saucepan with a non-stick surface, sauté the onion with the olive oil for 2 minutes. Add all the spices and sauté for another 3-4 minutes until the onion is softened . Pour the carrots and saute for another 10 minutes. Add the vegetable broth, lentils and tomatoes and once they boil, lower the heat and leave with a covered lid for about 20 minutes, stirring in between. Sprinkle with hand blender until your soup has a delicate texture. Garnish with freshly ground pepper or fresh coriander and optionally with herbal cream.
