stuffed pumpkin

New ingredient in the house and I am extremely excited with this recipe. Try it out as ASAP!!!!!! It delicious even the next day, and as always you can add a number of different other ingredients that you may like.


Ingredients:

  • 1 small butternut pumpkin

  • 100 gr couscous

  • 4-5 portobello mushrooms finely cut

  • 1 onion

  • cranberries

  • tomato sauce

  • thyme

  • hot paprika

  • pepper

  • salt

Instructions:

Cut the pumpkin in the middle and remove the seeds. chop the flesh and keep the skin aside for the moment. In a

non stick pan add some olive oil and saute the onion for some minutes. Then add the pumpkin flesh and the mushrooms and stir for 3-4 minutes until they get tender. Then add the tomato juice, the couscous, the cranberries and finally the seasonings. Leave them for a couple of minutes there. In the meanwhile preheat your oven to 200 degrees. Fill the pumpkin skins with the mix you prepared and cover them with aluminium foil. Then bake for 1.5-2 hours.
