zucchini boats
Ingredients:
1 big zucchini
200 gr minced chicken
1 onion
2 tbs tomato sauce
5-6 kalamon olives
pepper
paprika powder
thyme
turmeric
Instructions:
Cut the zucchini in the middle and remove the flesh leaving the skin. Put your boats on a baking sheet and then in the oven at 200 degrees. Leave them there for about 10 minutes an then turn them on the other side and leave until they get crispy. At the same time use a non-stick pan and add the chicken, the onion finely cut and the seasonings. Cut the flesh of the zucchini in small cubes and mix them with everything else in the pan. When they loose all their liquids add the tomato sauce and some water and stir well. When done and the olives (without the stone!!). Fill your zucchini boats with the mixture add place in the oven for another 4-5 minutes.
