cauliflower pizza crust
It finally happened!!! I wanted to make a cauliflower pizza crust since last year, but it's so difficult to find a nice and not ridiculously expensive cauliflower in Sweden. However since I found one I took the chance. The taste is amazing and of course once again the whole recipe is simple and healthy.

Ingredients:
For the crust
1/2 cauliflower (400 gr)
2 eggs lightly beaten
shredded mozzarella (50 gr)
1/2 teaspoon dried oregano
Toppings
1/2 onion
5-6 olives
1/2 tomato
1/2 avocado
2 mushrooms
1/2 red pepper
mozzarella
Instructions:
Break the cauliflower into florets and pulse in a food processor to a snowy powder. In a bowl stir together the cauliflower powder with all the other ingredients. Preheat the oven at 200 degrees. Transfer the ''dough'' to a paper sheet and spread into a circle. I prefer thick crusts as you can see at the picture. Bake for 20 minutes or more.
When the crust looks golden add your toppings and bake for another 10 minutes.
