mushroom soup
Ingredients:
250 g mushrooms of your choice
1 leek
2 tbs olive oil
1 liter of vegetable or chicken broth
thyme
garlic (powder or 1 clove)
pepper
salt
paprika
Instructions:
Chop the mushrooms and sauté into the saucepan with the olive oil. Then add the leeks cut in small pieces. Stir well and add your herbs. Add the broth slowly while stirring and boil for 10 minutes at high temperature. After 10 minutes, lower a bit and let continue boiling up to the point we like. It does not take long to make this soup. I serve it with lemon juice!
