afroditi's salad

This is my favorite salad, and I feel really proud for this creation of mine!It actulaly is one of my most classic meals. As in most of my recipes, I will not deal with any quantities, I leave it entirely on your preference!


Ingredients:

For the salad

  • spinach

  • white cabbage

  • red cabbage

  • broccoli cooked

  • 1 carrot

  • 1/2 avocado

  • 2-3 radishes

  • 2-3 fresh onions

  • 3 sun-dried tomatoes

  • 2 boiled eggs

  • 2 breadsticks

  • sunflower seeds

  • handful of unsalted nuts

  • chia seeds

  • linseeds


For dressing

  • 1 tbs dijon mustard

  • 3 tbs vinegar or balsamic vinegar

  • olive oil (optional)



Instructions:

Cut all of your vegetables in size and shape of your preference, and put them in a large bowl.

1. The broccoli I usually put it in the steam cooker and cut it into bunches. If you do not have the pot is just fine.


2. For the carrot instead of the grater, I use the peeler to make large stripes, and so keep more nutrients and have a stronger flavor. I add my eggs chopped, and the breadsticks broken in smaller pieces.

Pour all the ingredients for the dressing it into a mixing bowl and whisk.Add it to the salad. Then sprinkle with linseed and chia seeds, and add dry nuts. Mix the salad very well!










Tips

*I have found this nut mix and I use it for my salads because it is unsalted.

**Instead of eggs I often use boiled chicken, or no protein if I want my salad to be lighter.
