baked omelette

Omelette for today's lunch, a dish in which we can use a variety of ingredients. I kept it somewhat simple this time. You will notice, of course, that avocados and sweet potatoes dominate my recipes ....!


Ingredients:

  • 2 eggs extra large

  • 2 tbs milk(your choice)

  • 7-8 sweet potato slices

  • 1/2 pepper

  • chilly pepper

  • 1/2 onion

  • 1/2 avocado

  • 5 sun-dried tomatoes

  • turmeric

  • rosemary

  • pepper

  • paprika


Instructions:


Preheat oven at 200 degrees, put the potatoes on a foil to cook after mixing them with paprika,turmeric,rosemary, salt and pepper. I generally do not prefer to add oil but you can use it if you want. (Also, the potatoes I use are sweet potatoes, but the same goes for the normal ones). Until our potatoes are cooked (15-20 minutes), we have time to cut off our remaining vegetables, in the shape and size, we prefer. Once they're ready, add the rest of the vegetables on top and let them cook (except sun-dried tomatoes and avocados). Beat together your eggs and milk and pour the mixture in the oven. Lastly add the sun dried tomatoes and the avocado. In the mixture you can also add some more seasonings, ehatever you prefer. Once the the top is slightly golden remove from the oven and season with black pepper.
