tabbouleh (parsley salad)
Tabbouleh is a Levantine vegetarian salad. Since I tried it ( 6-7 years ago) I realized how easy it is to prepare it. It is a great lunch, dinner, or snack and takes a few minutes to be ready.
Ingredients:
500 g bulgur
1-2 tomatoes
1/2 cucumber
5-6 fresh onions
1 red onion
a bunch of parsley
some leaves fresh mint
olive oil
1-2 lemons
vinegar
salt
pepper
Instructions:
In a bowl we the bulgur and cover it with warm (not boiled) water. Leave it for about 10 minutes to inflate and soften while you cut all the other ingredients. Cut the tomato and cucumber into cubes. Also chop the onions and herbs and put everything in the bowl with the bulgur. Don't forget the fluids left on the cutting board! Add them to your salad.
Add salt, pepper, lemon and as much oil and vinegar as you want. Everything is a matter of preference, The salad must be kept in the refrigerator about half a day to be ready to enjoy it! You can serve it along with yoghurt as well as with grilled meat to give a cool touch to your meal.
