zucchini burgers with smashed carrots

One day my mom asked me: should I make you burgers with zucchini instead of bread / toast to make them healthier and light? I will not lie, at first I laughed but then I thought why not give it a try. Four years later, this is the only recipe I am using for my burgers and I find them more delicious than usual.

Ingredients:

For the burgers

  • 1/2 kg minced beef

  • 1 onion

  • 1/2 zucchini crushed

  • 1 egg

  • olive oil

  • fresh mint

  • thyme

  • sweet paprika

  • salt (optional)

  • pepper

For the carrot puree:

  • 1/2 kg carrots

  • almond milk (or regular low fat)

  • salt (optional)

  • pepper

  • chili paprika powder

Instructions:


We rub the zucchini on the grater (with or without its peel, I don't remove it) and drain it well from its liquids. We can drain it with the help of a clean towel. Then we put it together with the onion in the mixer and then place all the ingredients in a bowl . The amount of spices and olive oil depends on your judgment and taste.. I never follow the recipes faithfully! After we have shaped our burgers we leave them at least half an hour in the refrigerator to tighten.

Bake them either in the oven at 200 degrees or in a grill with minimal oil. Boil your carrots well until they become very soft. When ready, place them in a mixer with some almond milk and mix. Transfer to bowl and add your spices and mix with a spoon lightly. Serve with freshly ground pepper.


Tips:

For my vegetables I usually use the steam cooker. It is my favorite device because it solves my hands and also keeps the nutrients of all my ingredients.
